Cranberry Pork Chops (Video Included) #WhatsCookingWednesday

I can not get enough cranberries, it seems like once thanksgiving and Christmas are gone I don't get a fill of them until Easter so I decided to come up with this delicious recipe and it goes with my pork chops perfectly. Our meat is from Shopease Foods and having a stocked freezer full of meat has made meal planning so much easier. 

This recipe was so easy to assemble and you can really change up the side dishes you serve with it. Who said Cranberries were just supposed to be served with Turkey!  

4             Pork Chops
2    CUPS Cranberry Juice
1/2 CAN   Cranberry Sauce
1    MED   Onion, sliced (optional)

Preheat oven to 350 degrees.
Thaw pork chops and put them in a greased pan. 
Add Cranberry Juice and Cranberry Sauce.
Add in Onions if using. 

Bake in oven for 35 to 40 minutes until done. 

Serve with extra cranberry sauce on top.

Creamy Chicken Parmesan (Video Included) #WhatsCookingWednesday

A delicious family meal that makes dinner easy and on the table in 35 minutes. Today our meat is from Shopease Foods it makes meal planning easier when we don't have to run to the store every week. 

I love quick skillet meals that are on the table in no time so we can get out the door to our activities for the evening.

4             Chicken Breasts
1    TBSP  Oil
1    TSP    Italian Seasoning

1    MED   Onion, minced
2             Garlic Cloves
1    TBSP  Oil

1    CUP    Pasta Sauce
1/2 CUP    Half and Half Cream
1/4 CUP    Parmesan Cheese, grated
1    TSP    Italian Seasoning
Salt and Pepper to taste

1/2 CUP    Parmesan Cheese, shredded

Heat a skillet with Olive Oil and add in Chicken Breasts and season both sides with Italian Seasoning. Remove from pan once chicken is cooked.

Add more oil to the skillet with onion and garlic. Saute until onion is transparent. 

To the onions and garlic add pasta sauce, half & half cream, parmesan cheese, Italian seasoning and salt and pepper. Let simmer before adding chicken back into the skillet and topping with shredded Parmesan Cheese.

Serve on a bed of pasta or rice.

Instant Pot/Slow Cooker Seasoned Roast (Video Included) #WhatsCookingWednesday

The days have been cold and snowy lately and I wanted to get a full meal on the table for when Rob got home from work since lately he has been doing a lot of outdoor work. Shopease Foods makes it so easy to do because I have so much to choose from in my freezer. I love the versatility of a roast because it means that there are leftovers for the next day for Rob to take to work for lunch. I was really impressed with how lean this cut of meat was. 

Using my slow cooker and instant pot to make one pot meals cuts down on time for me and it allows my family to come home to a great meal after an evening of activities. It keeps us on track with our budget while allowing us to participate in those extra activities we want to during the Christmas season.

1/2 TSP    Salt
1/2 TSP    Black Pepper
1/2 TSP    Onion Powder
1/2 TSP    Garlic Powder
1/4 TSP    Chili Powder

1    TBSP  Oil
3    LB      Roast, pork or beef

1    CUP    Water
1/2 CUP    Apple Juice

4    MED    Potatoes
3    MED    Carrots

Mix up all spices in a bowl and rub over your roast. 

Heat oil in your frying pan or in your instant pot on Saute. 
Sear all sides of the roast. 

Once you have seared all sides of your roast place in your slow cooker or instant pot with water and apple juice. 

If cooking in slow cooker - add in your carrots and potatoes enough to feed your family. Cook on high for 4 hours and low for 6 to 8 hours. 

If you are making this in your Instant Pot then set to Manual for 15 minutes do a quick release and add in your carrot and potatoes. I like to put them in my steaming basket but that isn't necessary it is just personal preference. Put your lid on again and set to Manual 5 minutes. 

Dinner will be done and ready to serve.

ENCHILADA RICE (Video Included) #WhatsCookingWednesday

Being stuck in the house is getting to me and my cooking skills are being put to the test since I can not stand very long due to being on crutches. I am beyond thankful for Shopease Foods because it is making my life easier because I don't have to depend on anyone running around and getting things I missing for dinner since it was all delivered to my door. 

I am pulling out all the quick and easy prep meals this week while I am on crutches so that my family can still eat at home without take out for the week. It is going to be tough but I will get through this.  I am going to my tried and true stand by today. Enchilada Rice is perfect to serve on it's own or as a side dish. We often serve it with Nachos or in a wrap.

1 lb ground meat
2 cups cooked rice
1 can pinto beans, drained and rinsed
1 can enchilada sauce
1/2 tsp cumin
1/2 tsp salt
1 cup corn, frozen
1 cup shredded cheese
 In a large skillet brown ground meat until cooked. Drain fat if required. 

Stir in remaining ingredients, except cheese, and cook on medium-low heat until heated through. 

Stir in cheese and serve.

EASY ENCHILADAS (Video Included) #WhatsCookingWednesday

I want to run away! It has been one of those days for more than one day I might add. Adulting can be hard but today Shopease Foods made my life a bit easier because I had a freezer full of meat to choose from for my dinner tonight. I didn't have to go out and purchase anything to make it. Shopease Foods for the win! 

This week I am making Easy Enchiladas for my family. When I grabbed my tried and true recipe for this dish I was reminded that I haven't made this in YEARS! I am not sure why I haven't because it is a family favourite but I think it just got pushed to the side for a while. My daughters request once I placed them all the table was you need to make this more often! WIN!

1 lb Ground Meat
1/2 Onion, diced
1/2 Pepper, diced
1/4 cup water
1 envelope Taco Seasoning Mix
  
1 can Cream of Chicken Soup
1/2 cup Sour Cream or Yogurt
1 cup Cheese, grated

12 Tortillas  

 
Preheat oven to 350*.

Brown Ground Meat, onion and peppers together in a fry pan.

Add water and taco seasoning to browned meat mixture.

In another bowl mix together soup, sour cream and cheese.

Assemble enchiladas by putting in meat mixture and some soup mixture into each tortilla. 

Roll tortillas and place into baking dish. 

Bake for 20 to 30 minutes.

TURKEY TETRAZZINI (Video Included) #WhatsCookingWednesday

We celebrated Thanksgiving on Sunday in Canada and because of that I have a lot of turkey leftovers. There is no better way to use up my turkey leftovers thanour family favourite Turkey Tetrazzini. 

Shopease Foods provided the 17lb Turkey for our Thanksgiving and I have a video on YouTube on how we did our turkey in our roaster last year and we did it the same way this year but you can view the video here. Time to get on with my Tetrazzini recipe now.  

16 ounces Egg Noodles (spaghetti noodles)
2 tsp Butter
4 strips Bacon, cut into strips
1 small Onion, diced
1 small Red Pepper, diced
1 small Green Pepper, diced
1 stalk Celery, diced
3 TBSP Butter
1/3 cup Flour, all purpose
1/4 tsp salt
1/4 tsp pepper
3 cups Turkey Broth
2 cups Peas, Frozen
3 cups Turkey, bite size pieces

Preheat oven to 375*

Boil water to cook pasta as per package instructions. Once cooked add in 2 tsp of butter and put noodles in prepared casserole dish. 

In a heated frying pan cook bacon. Transfer bacon to plate once cooked.
In the same frying pan cook onion, red and green pepper and celery. Saute until done. Transfer to another plate. 

Melt butter in pan and add flour, salt and pepper until thickened. Add broth gradually keep stirring so there are no lumps. Once thickened add in green pepper mixture, peas and turkey. Once combined spoon over noodles.   

Tops with breadcrumbs, parmesan cheese and bacon. Bake for 25 to 30 minutes and serve!

Meal Planning on my $50 Budget - September 26, 2016

This past week we received our food order from Shopease Foods which lead to me not needing a whole lot of groceries to add to it. We do not only get meat from Shopease but we also get some frozen vegetables and dry goods. You are able to even get cleaners with your Shopease order really limiting your shopping trips. I make a lot of my cleaning products so it is not something I need. We like to buy fresh season vegetables to add to your menu every week so we only get a few frozen vegetables in our order.  

I love that they always set up a delivery time with my so I don't have to sit at home all day waiting for my order. My time is valuable and just having 2 to 3 hour window for delivery works well for my family but Shopease is always willing to deliver you order at the best time suited for you.

I plan on picking up a few other things this week and I will add them as I pick them up so I can keep on budget.

SLOW COOKER/INSTANT POT MARINARA SAUCE (Video Included) #WhatsCookingWednesday

Today I am making my Marinara Sauce that is perfect to serve on top of some pasta noodles or make a lasagne with for your family to enjoy. The beauty with this sauce is that you can make a large batch and freeze it for later so you are making two meals at once while you are busy doing other things that need to get done. 

This week the ground meat is from Shopease Foods. I love using their meat because I find it is really lean and I have never had to drain any fat off of it. They deliver right to my door making it easy for me to maintain a healthy menu for my family. All their meat is 100% Canadian Natural Meats and Shopease Foods will customize your meat order to your dietary needs.

1 TBSP Olive Oil
1 pound Ground Meat
1 Onion, diced
2 Celery Stalks, diced
1 Garlic Clove, minced
1 Cup Chicken Stock
2 Carrots, shredded
28 Ounces Tomatos (canned or fresh)
1 tsp Basil, dried
1 tsp Oregano, dried

1. In a large pan add Olive Oil and brown ground meat - drain if required. Add in onion, celery and garlic. I added chicken stock to this to prevent it from sticking to the bottom of the pan.  

2. I tossed my carrots into the vitamix with my tomatoes to puree before adding it into the slow cooker with the meat sauce. Mix all together. Add in spices to your taste. 

3. Set slow cooker to 6 hours to cook while you are away at work or if using an instant pot set to cook for 15 minutes.

Use for your meal that night and freeze the rest of the sauce for another meal at a later time.

CROCKPOT CHICKEN POT PIE

I am trying to refrain from decorating for the fall. The fall is my favourite time of the year so I always want to get started on it as soon as a hint of it is in the air. I was just notified that our local apples are ready to pick already so that means it is fall now right! 

I thought I would feature one of my go-to recipes in my slow cooker. This is the pie without the crust and so easy to make. It cooks all day while you are busy working. Just pop some biscuits in the oven or pick some up on your way home from work. Dinner is ready when you walk in the door.

1 pound Chicken Boneless (I used leftover chicken)
3 medium potatoes, peeled and diced
1 onion, diced
2 carrots, peeled and diced
2 stalks celery, diced
2 bay leaves
1 cup corn kernels, (frozen)
1 cup peas, (frozen)

salt & pepper


For the sauce

3 tbls butter
3 cloves garlic, finely minced
1/2 cup all-purpose flour
2 cups chicken stock

1/2 tsp dried thyme
1/2 tsp dried basil
1/2 tsp dried oregano
salt & pepper


1. Add chicken to the crock pot, then add potatoes, onion, carrots and celery.

2. To make the sauce, melt butter in a large saucepan. Add garlic and cook for about 1 minute. Lower heat and whisk in flour until lightly browned for about 2 minutes.

3. Whisk in chicken stock, thyme, basil, oregano. Keep whisking until there are no more lumps. Whisk constantly until sauce begins to thicken, season with salt and pepper. 

4. Stir in chicken stock mixture and bay leaves into the crock pot.

5. Cover and cook on low heat for 4-6 hours or high for 2-3 hours. (Add corn and peas during the last 30 minutes of cooking time.) 

6. Add in Corn and Peas and cover and keep warm for an additional 30 minutes.


NOTE - If using full chicken pieces - remove chicken from the slow cooker and chop/shred the chicken then return to the pot. 

Serve chicken pot pie in a bowl topped with biscuits.

5 MINUTE BROWNIE WAFFLES (Video Included) #WhatsCookingWednesday

Today is National Waffle Day so we are celebrating by sharing our easy dessert waffle recipe. Everyone loves it when I make brownie waffles. You waffle iron can be used for so many different things besides the traditional waffles.

I thought I would share our brownie waffle recipe with you today so you can make this lovely dessert waffle that everyone in your family will enjoy.

Ingredients

1 Boxed Brownie Mix
1 Egg (extra)
Cooking Spray

1. Make brownies according to box instructions. Add one extra egg. 

2. Heat up waffle iron.

3. Spray waffle iron before adding mix. Cook the same as always.

 The extra egg adds enough fluid for the mix to go into the waffle iron without being too thick.

STUFFED PEPPERS IN THE INSTANT POT (Video Included) #WhatsCookingWednesday

I love cooking meals for my family every week. But I get bored easily when it comes to cooking the same thing over and over again. Today instead of making up some cabbage rolls I thought why not make stuffed peppers using a similar recipe. 


I still have some ground meat left from our last Shopease Foods delivery and I love that their is little to no fat in our ground meat so I don't have to worry about that collecting in the bottom of the pot when I use my instant pototherwise I would probably do a knife cut on the bottom of the pepper for the fat to drain out but it isn't neccessary with the ground meat I use.

Ingredients

4 Green Peppers
1 lb Ground Meat
1 cup Rice
1 Onion, diced
1 green pepper, diced
1 tsp Oregano
1 egg

For Sauce
1/2 can Tomato Sauce, large can
1 can Tomato Soup
3/4 can Water        


1. Cut tops off of green peppers and clean them out. Rinse well.

2. Mix together ground meat, rice, onion, green pepper, oregano, and egg until well combined. Stuff green peppers with mixture.

3. To make sauce combine tomato sauce, tomato soup and water and mix well before pouring over peppers.

Cooking Instructions:

Oven - preheat to 350* and cook for 1 hour, basting with sauce every 15 minutes. 

Instant Pot - Manual 15 minutes.   

We really love our instant pot it has made dinner time so much easier?

5 MINUTE S'MORES (Video Included) #WhatsCookingWednesday

Shaylin has been asking to do a takeover of my What's Cooking Wednesday and this week I finally allowed her to do it. She loves cooking and she wanted to share this recipe with all of you. 

There is no campfire needed and the only help you would have to give your children is melting the chocolate. Definitely a kid friendly recipe for the kitchen.

Ingredients

1/2 Cup Graham Cracker Crumbs
1/2 Cup Chocolate Chips, Melted
20 Large Marshmallows
20 Sticks

 

1. Melt Chocolate chips in microwave or double broiler.
2. Assemble all items on a working surface so you can start assembling. 
3. Put a bit of chocolate on the end of the stick like a q-tip. 
4. Push stick into center of marshmallow but not through. 
5. Put marshmallow into chocolate.
6. Run coated marshmallow in graham cracker crumbs.

NOTE: You can use any kind fo chocolate just be sure to melt it first.

These would make a perfect treat for friends getting together for a day by the pool or even a party.

NACHOS (Video Included) #WhatsCookingWednesday

Have you had one of those days when everything you touch goes wrong. I mean everything! It didn't matter what I touched it went wrong from my blog to editing video. Then I decided to change what I was doing so I started to cook dinner and everything went wrong. I dropped everything so I had to revamp my dinner menu plan for the night and go with a standby I always have on hand. 

Shopease Foods has provided the meat for this recipe and you can find out more about them by visiting their website. Tonight on my menu I switched it up and decided to make some Nachos.

Ingredients

1 lb Ground Meat
1/2 Onion (Medium), diced
2 Cups Cheese, grated
Tortilla Chips

 

1. Brown ground meat. 
2. Spread Tortilla Chips on a cookie sheet.
3. Add meat and onion to nachos, top with cheese.
4. Cook in oven at 350* for about 3 to 5 minutes. 
5. Broil nachos to cook top for about 3 minutes.

Our Nachos are always changed up depending what we have in the fridge that day. I try to keep most of the ingredients on hand so we can make them in a pinch at any time.

I am all about quick dinners now that summer is here. I don't want to spend a lot of time cooking and heating up my house. The quicker the dinner the better and it works out better if the clean up is just as quick.

This has been the best tasting meat we have ever had with next to know fat on our meat. They stand behind their product so much so that if for some reason your package becomes unsealed they will replace it no questions asked.

Ingredients

1 lb Ground Meat
1/2 Onion (Medium), diced
250g Pepperoni, Sliced or diced
1 Jar Spaghetti Sauce
2 Cups Water
3 Cups Pasta (I used Rotini)
2 Cups Cheese, grated

 

1. Brown ground meat and onions together. 
2. Add 2/3 of pepperoni, spaghetti sauce, water and pasta. 
3. Cover and cook until most liquid is gone and pasta is cooked.
4. Once cooked top with cheese and rest of pepperoni. 
5. Cover until cheese is melted.

This would work great served with garlic bread or a salad or both!

BBQ CHICKEN SANDWICH (Video Included) #WhatsCookingWednesday

It was one of those days when we really didn't have a lot of time to prepare dinner. I knew this ahead of time and decided to make something quick and easy and good for my family. We made some BBQ Chicken Sandwiches and served it with some Potato Salad. The chicken from Shopease Foods is easy to do in my instant pot and it doesn't heat up my house. Who wants a warm house on a hot day? Not me! This really only takes 2 ingredients besides your side dishes you want to serve with it. 

Ingredients

3 Cups Chicken, shredded
3/4 Cup BBQ Sauce
8 Buns

 

1. Add BBQ sauce to shredded chicken. Mix until combined. Add more BBQ sauce if you wish. 
2. Serve shredded chicken on buns. 

This is a great meal when served with a salad in the summer.

ONE POT CHICKEN FAJITA PASTA (Video Included) #WhatsCookingWednesday

One pot meals make clean up so easy. The chicken we get from Shopease Foods is so lean I really do not have any fat to cut off of them. Making meal prep so much easier since I just have to thaw my meat and start preparing my meal. The temperatures cooled off a bit for the day so I decided to cook on my stove since I knew it wouldn't heat up the house.

Ingredients

2 TBSP Olive Oil
1 Pound Chicken Breasts, Boneless Skinless, bite-sized
1 Envelope Taco Seasoning
2 Cups Bell Peppers, diced
3 Cloves Garlic, minced
2 Cups Chicken Broth
1/2 Cup Half & Half Cream
1 Can Tomatoes, diced
3 Cups Penne Pasta

1/2 tsp Salt
 

1. Season Chicken with 1/2 the envelope of Taco Seasoning. 
2. Add 1 TBSP of the olive oil to the skillet and allow it to heat up. 
3. Once heated add in chicken and cook until both sides are seared, cooked and browned. 
4. Remove chicken from pan once it is done. 
5. Add 1 TBSP Olive Oil to the pan and allow to heat up. 
6. Add in Peppers and onions and the rest of the envelope of Taco seasoning. Once the peppers and onions are almost done add in Garlic and turn heat to low.
7. Remove Peppers, Onions, and Garlic from pan. Place on plate with chicken.
8. Place the rest of the ingredients in the skillet. Stirring occasionally until it comes to a boil. Then cover and reduce heat to low.
9. Cook until pasta is tender as per package directions Add Chicken, peppers and onions back into skillet cook for another 2 minutes to combine everything and heat through.
10. This is perfect served with salad and/or garlic bread.
