Instant Pot/Slow Cooker Seasoned Roast (Video Included) #WhatsCookingWednesday

The days have been cold and snowy lately and I wanted to get a full meal on the table for when Rob got home from work since lately he has been doing a lot of outdoor work. Shopease Foods makes it so easy to do because I have so much to choose from in my freezer. I love the versatility of a roast because it means that there are leftovers for the next day for Rob to take to work for lunch. I was really impressed with how lean this cut of meat was. 

Using my slow cooker and instant pot to make one pot meals cuts down on time for me and it allows my family to come home to a great meal after an evening of activities. It keeps us on track with our budget while allowing us to participate in those extra activities we want to during the Christmas season.

1/2 TSP    Salt
1/2 TSP    Black Pepper
1/2 TSP    Onion Powder
1/2 TSP    Garlic Powder
1/4 TSP    Chili Powder

1    TBSP  Oil
3    LB      Roast, pork or beef

1    CUP    Water
1/2 CUP    Apple Juice

4    MED    Potatoes
3    MED    Carrots

Mix up all spices in a bowl and rub over your roast. 

Heat oil in your frying pan or in your instant pot on Saute. 
Sear all sides of the roast. 

Once you have seared all sides of your roast place in your slow cooker or instant pot with water and apple juice. 

If cooking in slow cooker - add in your carrots and potatoes enough to feed your family. Cook on high for 4 hours and low for 6 to 8 hours. 

If you are making this in your Instant Pot then set to Manual for 15 minutes do a quick release and add in your carrot and potatoes. I like to put them in my steaming basket but that isn't necessary it is just personal preference. Put your lid on again and set to Manual 5 minutes. 

Dinner will be done and ready to serve.
