Mexican Stuffed Meatloaf (Video Included) #WhatsCookingWednesday

This week the temperatures have dropped in our area which means no pool play but also time to bring in some comfort food to keep us warm. There is nothing like a good meatloaf to fill everyone's belly and warm us up. 

This week I used two packages of ground meat from Shopease Foods to make my meatloaf. One of the many things I like about my meat order is that it is unique to my family meaning I can have it packaged just how I want it. I like to have the ground meat packaged in one pound packs so it is easier to use for our family.

Ingredients
2 lbs Ground Meat
1 Medium Sized Onion, Diced
1 1/2 Cups Tortilla Chips, crushed
3/4 Cup Salsa
2 Eggs
1 Packet Taco Seasoning
2 Cups Cheese, grated
1 Green Onion, Chopped

1. Preheat oven to 350F. Spray loaf pan. 
2. Mix together ground meat, salsa, onion, tortilla chips, eggs and taco seasoning. I find this easier to do by hand. Be sure to wash your hands.
3. Create a well in the center of the meatloaf to put your cheese in. Roll in sides to meat in center over top of the cheese. 
4. Let cook for approximately one hour at 350F and once you pull it out of the oven garnish with green onions.
