Summer is in full swing which means time to get the grill and instant pot out. The instant pot doesn't heat up my house and everything tastes better grilled.

What are you grilling this week on the bbq?

7 LAYER CHICKEN TACO SALAD (Video Included) #WhatsCookingWednesday

This salad is very refreshing on a hot day. It is the perfect potluck salad and a meal in a bowl. The Shopease Foods chicken breasts were a perfect addition to this version of a taco salad it allowed it to become a meal in a bowl. This was a hit with everyone in my family. 

Ingredients

2 Cups Spring Salad Mix
1 Large Tomato, chopped
2 Cups Corn, cooked
2 Chicken Breasts, diced
2 Cups Lettuce
2 Cups Cheese, shredded

2 Cups Tortillas, crushed

 

Salad Dressing

 

1/2 Cup Salsa

1/2 Cup Catalina Dressing

 

1. In a large glass bowl combine the ingredients in the order listed above. 
2. Mix up Salad Dressing and then you can pour it over the salad once you are ready to eat it if you are at a potluck or have a gathering but I recommend setting it to the side so you can just put it on the salad once you dish it on your plate. That way if you have leftovers you can save them for the next day.

Wants Vs Needs

I know I have blogged about this before but for some reason lately I have been getting into more and more conversations with people on the difference between a want and a need.

There are times when a need and want are hard to clearly define and wants can become needs depending on circumstances.

 WANT:

  • designer clothes
  • latest electronic toy
  • video games
  • toys
  • candy 


NEED:

  • food to eat
  • a place to live
  • winter coat (it's cold here)
  • a pair of footwear


The key is to figure out your own wants and needs. All of our wants and needs are going to be different. But you do need to sit down and figure out what yours are.

Here are some helpful questions that will help you determine the difference between a want and a need:
      - What do I need when I wake up in the morning? Toothbrush, towel, hair
        brush, blow dryer, clothes, food
      - What do I need to get to work or school in the morning? Bus pass, vehicle
      - Are there things I need for work or school? Books, computer, pens


Let's give an example... you need a sweater for winter because your other one is worn out or too small. Do you need that new designer sweater for $80 you saw at the mall last week or will one for $15 do just the same and keep you just as warm. I do realize that there is a difference sometimes in quality... I know that first hand... I usually buy our clothes from brand name stores and shy away from Big Box stores because one the quality is usually better and also the prices are better at the brand name stores if you shop the sales and look for their discounts. 

 

Prioritizing is so hard not to mention at times no fun but once you get down what you truly need vs what you want you will find life a lot simpler. I am speaking from experience. Just give it a try... sit down and make a list.

Greek Chicken Marinade (Video Included) #WhatsCookingWednesday

Are you looking for something to pack some punch for dinner tonight?

Greek food and seasoning is a favourite in our household. I marinated the chicken for 2 plus hours and the seasoning was throughout the chicken. I baked this in a casserole dish and the sour cream mixture made my Shopease Foods chicken pieces very moist and flavourful.

Ingredients
2 TBSP Olive Oil
1 cup Sour Cream
3 cloves Minced Garlic
1/2 TBSP Oregano
2 TBSP Lemon Juice
1 Small handful Parsley
Salt & Pepper
4 to 6 Chicken Pieces

1. Combine Olive Oil, Sour Cream, Garlic, Oregano, Lemon Juice, Parsley, Salt, and Pepper. Place in a resealable bag. Add chicken pieces to bag to marinade seal bag and place in refrigerator. Marinate for at least 30 minutes.
2. After marinating, preheat oven to 375F. 
3. Place chicken in a casserole dish. Bake at 375F for 50 minutes or until golden brown on top.

Menu Planning Monday - June 13, 2016

I love cooking on the grill. Number one it doesn't heat up my house and it really does make for an easier clean up. This week it is time to get back to some of our tried and true recipes. Every week I usually try to do a no meat day at least once and that is the plan for this week. 
 
I still have some turkey to use up in the freezer, casserole time it is. The rest of the week we will be digging into our Shopease Foods Meat. It really makes menu planning easy when I have a freezer full of meat.

Where are some of your tried and true recipes?

Mexican Stuffed Meatloaf (Video Included) #WhatsCookingWednesday

This week the temperatures have dropped in our area which means no pool play but also time to bring in some comfort food to keep us warm. There is nothing like a good meatloaf to fill everyone's belly and warm us up. 

This week I used two packages of ground meat from Shopease Foods to make my meatloaf. One of the many things I like about my meat order is that it is unique to my family meaning I can have it packaged just how I want it. I like to have the ground meat packaged in one pound packs so it is easier to use for our family.

Ingredients
2 lbs Ground Meat
1 Medium Sized Onion, Diced
1 1/2 Cups Tortilla Chips, crushed
3/4 Cup Salsa
2 Eggs
1 Packet Taco Seasoning
2 Cups Cheese, grated
1 Green Onion, Chopped

1. Preheat oven to 350F. Spray loaf pan. 
2. Mix together ground meat, salsa, onion, tortilla chips, eggs and taco seasoning. I find this easier to do by hand. Be sure to wash your hands.
3. Create a well in the center of the meatloaf to put your cheese in. Roll in sides to meat in center over top of the cheese. 
4. Let cook for approximately one hour at 350F and once you pull it out of the oven garnish with green onions.

CHILI PASTA SKILLET (Video Included) #WhatsCookingWednesday

The week has been flying by and we have been so busy or maybe I have just said yes to too many things. Either way, time is not on my side. I needed a quick skillet meal done in 30 minutes tonight and this one was perfect.

The one thing I can always count on is my meat and cookware from Shopease Foods. Having the Nutri-Stahl makes it even easier to cook and keep things at the perfect temperature thanks to their Tempalert knob on the lid. Always keep it in the green zone. 

Ingredients
3 cups Penne Pasta, uncooked
1lb ground meat
1 small onion, chopped
2 cloves garlic, chopped
1 cup frozen corn
1 TBSP chili powder
1 Lg can Diced Tomatoes
1/2 cup Salsa
3/4 cup Shredded Cheese

1. Cook pasta as directed.
2. Meanwhile brown ground meat with onion and garlic. 
3. Add corn and chili powder to meat mixture, cook for 5 to 8 minutes or until vegetables are cooked. 
4. Stir tomatoes and salsa into meat mixture and cook until heated through, stirring occasionally. 
5. Drain Pasta. Combine with meat mixture; stir in shredded cheese to combine and melt. 

Be on the lookout for next week when we will feature a campfire meal to take with you camping.

Menu Planning Monday - May 16, 2016

Old man winter has reared its ugly head here in my next of the woods. Snowing on Sunday. Oh my lands, whoever thought that would happen. I think some soups and stews for the first few days this week before it warms up at the end of the week. I have had a very busy weekend and having my freezer full ofShopease Foods meats means it is easier for me to make my menu plan for the week. 

 

Shopease foods has been a lifesaver for not only myself but my family. We have are able to go into our freezer and grab meat we know we can eat and because it has been customized to our families dietary restrictions.

LOADED RANCH POTATO CHICKEN CASSEROLE (Video Included) #WhatsCookingWednesday

This week in the kitchen I am cooking Ranch Potatoes. I have been craving Cheesy Ranch Potatoes and this is a good way to incorporate some chicken and make it into a one dish casserole. 

I would have to say the only downside to having a freezer full of meat from Shopease Foods is trying to decide what to cook every night. Almost too much selection. Don't get me wrong the meat is the best we have ever tasted but how do you narrow down your selections every week. I have taken to making a meal plan at the beginning of the week and I bring up only what I need for the week to my main fridge/freezer. 

Ingredients
6 Medium Sized Potatoes
2 Boneless, Skinless Chicken Breasts
Salt and Pepper to Taste
1/4 cup Ranch Dressing (for potatoes)
1/4 cup Ranch Dressing (for chicken)
2 cups shredded cheese
4 slices Bacon (cooked and crushed)
Chives or Green Onions to garnish top

1. Preheat oven to 450*.
2. Spray 9x13 pan so potatoes won't stick.
3. Dice potatoes into bite size pieces you should have enough to cover the bottom of the dish. 
4. Mix potatoes, salt, pepper and ranch dressing in a bowl. Stir to combine. Then put potatoes into casserole dish. 
5. Bake potatoes for 30 minutes at 450*, tossing the potatoes every 10 minutes.
6. Use leftover ranch dressing in the bowl and add another 1/4 cup to it and coat chicken that has been cut into 1-inch pieces. Marinate chicken in ranch dressing until potatoes are cooked.
7. Once potatoes are done put raw chicken on top of the potatoes and cover with foil and place back in the oven for 20 minutes at 400*. (Note temperature change)
8. Once chicken is cooked bring casserole out of the oven and top with cheese, bacon and chives. Put back into the oven for about 5 minutes to melt cheese.

Planning our weekly menu is so much easier when you have a freezer full of meat. Shopease Foods is where we get our meat delivered from 4 times a year. It really is the most convenient way for our family and it allows us more time together and getting all our activities done on a weekly basis.

Apple and Onion Pork Tenderloin in the Instant Pot(Video Included) #WhatsCookingWednesday

I am still using my instant pot like crazy. Seriously where has this been all my life. This week we did pork tenderloin in the instant pot and with the leftovers we made it into pulled pork sandwiches for lunch the next day. I love when we can get more than one meal out of a dinner since my husband takes his lunch to work every day and I have people at home to feed as well at lunch. Multi-purpose meals are my favourite. 

Is there are meal that you make that you just love to eat the leftovers more? Do you use up your leftovers? I have heard that some people do not like leftovers at all, are you that person? My question for those that do not like leftovers what do you do with your leftovers then?

Apple And Onion Pork Tenderloin
     

 

Ingredients

·        2 Onions, sliced
·          3 Apples, sliced

·        3 cups Apple Juice
         Salt and Pepper To Taste
         2 Bay Leaves
         1 Pork Tenderloin
 

·        

Directions

1. Place onions and apples in the Instant Pot add in apple juice. 
2. Add in Pork Tenderloin salt and pepper to taste. 
3. Add 2 bay leaves on top of the pork tenderloin. 
4. Press Manual and then adjust time to 60 minutes. 
5. Let pressure release naturally and serve.

Instant Pot Ribs (Video Included) #WhatsCookingWednesday

A few days ago I received an Instant Pot. For those of you not familiar with Instant Pot it is a 7-in-1 multi-functional cooker - pressure cooker, slow cooker, rice cooker, saute/browning, yogurt maker, steamer, and warmer. In the days that I have had this new appliance I have used it as a steamer, rice cooker, saute/browning and pressure cooker and I can't wait to keep putting it to the test. 

Instant Pot Ribs
     

 

Ingredients

 

·        1 cup water
·        1/2 rack Ribs

·         BBQ Sauce
 

Directions

1. Place 1 cup of water in the pot and insert trivet.
2. Add Ribs on top of trivet. 
3. Press Manual and then adjust time to 10 minutes.
4. Let pressure release naturally. 

 

5. Pull out Ribs and place on a lined cookie sheet and cover with BBQ Sauce of your choice. 
6. Broil for about 6 minutes on each side. Be sure to keep your eye on them so they don't get over cooked.

Menu Planning Monday - April 4, 2016

This week is all about using my Instant Pot. It just arrived last week while I was in NYC and I can't get enough of it. I love how it cooks and how quick meal prep is. I cook on a budget and the Instant Pot takes less hydro so that helps with my hydro budget and it helps me manage my time better because it frees me up to do more things with my family instead of slaving away in the kitchen.
